Rocky Road Bites

4 – 1/2 oz. milk chocolate
2 – 1/2 oz. mini multi-colored marshmallows
1/4 cup chopped walnuts
1 oz. no soak apricots, chopped
- Line a cookie sheet with baking parchment
- Break the milk chocolate into small pieces and place in a large mixing bowl. Set bowl over a pan of simmering water and stir until the chocolate has melted
- Stir in the marshmallows, walnuts and apricots and toss in the melted chocolate until well covered.
- Place heaped teaspoons of the mixture on the prepared cookie sheet.
- Leave the candies to chill in the refrigerator until set.
- Once set, carefully remove the sweets for the baking parchment. Enjoy.
