Peaches n Cream Rice Pudding

Peach sauce2-3 peaches diced1/4 cup water1/4 cup sugar In a pot over medium heat combine water and sugar.Cook on medium until sugar is dissolved.Lower heat to low, add peaches.Simmer uncovered for 30 minutes
Rice pudding1 cup Heavy Cream2 cups Milk5 Eggs1/2 cup Sugar1 tsp Vanilla1/2 tsp Salt2 Peaches (diced)3 cups Rice (already cooked)

In a large heavy pot, add milk, cream, eggs and sugar. Mix well.Simmer on medium and stir constantlyMixture will start to thickenLower heat to Low
Add peach compote and fresh diced peach.Combine really well.Once fresh peaches have combined into custard well, add Rice.Stir constantly over low heat.
When mixture is creamy and thick and starting to bubble remove it from heat.Stir in vanillaCover and let stand 5 minutes.Refrigerate for 2 hours
